“Finger Limes” “Citrus Caviar”
Australia is blest with many unique animals and plants Eucalyptus is native to Australia, but is now found in every country around the world, it is famous for its strength and beauty. Another, little know uniquely Australian plant, which bears one of the most exciting fruits to have graced tables in Australia and overseas. The plant is of the citrus family and native to Australia locally it is called a “Finger Lime” (because of its shape) but Internationally it is known as ” Citrus Caviar” as the pearls of lime look like caviar.
There are three varieties with distinctive colours and flavours:

The strong outer skin protects the fine Pearls of Lime Juice which are held in a fine membrane.
The look fantastic and taste even better, weather it is on a fine meal or in a cocktail the taste sensation is released once the consumer bits into the pearl of juice, releasing a refreshing burst of fresh lime to tantalise the taste buds and complement the other surrounding flavours and Fragrances.
This fruit is unique and sells for very high prices in Europe, as yet it has not been put to the China market due to biosecurity as there is no classification for it in China fresh. However, the finger lime can be frozen for up to 18 months without any loss in quality. The pearls of the lime juice are beautiful and taste amazing; they are mainly consumed in high end restaurants, as a garnish or flavour sensation for all sorts of dishes.

Cocktails are a very significate area of growth for “Citrus Caviar”
The pearls of lime are placed in the drink as a garnish but when it’s drunk, the pearls burst giving a fantastic taste of pure lime, which is very exciting and adds to the other surrounding flavours.

Another wonderful attribute of this uniquely Australian native fruit, is its ability to be frozen for up to 18 months without loss of flavour, which means it can be kept ready for a function or special celebration frozen until needed, giving chefs and bar mangers the ability to provide the fruit to customers year round.
